If you are unable to find Lancashire cheese, try this recipe with another mild crumbly cheese.

Makes 12 slices

Butter - 15g (½ oz)
Self raising flour - 200g (7 oz)
Baking powder - 1 heaped tsp
Golden caster sugar - 75g (3 oz)
Dessert apples - 725g (1 lb 10 oz), cored and peeled
Seedless raisins - 125g (4½ oz)
Grated nutmeg - 1 tsp
Eggs - 2, beaten
Sunflower oil - 110 ml (4 fl oz)
Lancashire cheese - 150g (5 oz), crumbled

METHOD

Generously butter a loose-based 23 cm (9 inch) cake tin. Pre-heat oven to 170 ºC / 325 ºF / Gas 3.
 
Sift flour and baking powder together. Add sugar, apples, raisins and nutmeg.
 
Beat eggs into oil and stir into the mix. Spoon half into the tin. Add cheese and top with the remaining apple mix.
 
Bake for 1 hour until golden. Cool in the tin for 30 minutes. Dust with icing sugar for decoration.
